I have one of the newer 225's that has that feature now on the front of the thermostat (a little button you push with a small paper clip or small screwdriver) where I think it used to be on the back - now you can change it at any time depending on if your goal is temp or smoke.... I set the controller to 250, then to 325, then to 450. Then down to 180, then off.
